Twice Baked Potato Casserole
Ingredients
- 7 medium red potatoes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1lb bacon, cooked and crumbled
- 3c sour cream
- 2c mozzarella cheese, shredded
- 2c cheddar cheese, shredded
- 3 green onions, sliced
Directions
- Pre-heat oven to 400
- Pierce each potato deeply with a fork or sharp knife about four times on each side. Place the potato directly on the oven rack in a preheated oven, and bake until tender (about 45 minutes).
- Cut baked potatoes into 1-inch cubes.
- Grease a 13x9 baking dish and add half of the potatoes.
- Sprinkle with half the salt, pepper, and bacon. Spread on half the sour cream. Then top with half of each of the cheeses.
- Add rest of potatoes to baking dish, and repeat the layers in step 6 using the rest of the ingredients
- Bake uncovered at 400 for 16-22 minutes or until cheeses are melted.
- Sprinkle with the sliced green onion.
