Twice Baked Potato Casserole

Ingredients

  • 7 medium red potatoes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1lb bacon, cooked and crumbled
  • 3c sour cream
  • 2c mozzarella cheese, shredded
  • 2c cheddar cheese, shredded
  • 3 green onions, sliced

Directions

  1. Pre-heat oven to 400
  2. Pierce each potato deeply with a fork or sharp knife about four times on each side. Place the potato directly on the oven rack in a preheated oven, and bake until tender (about 45 minutes).
  3. Cut baked potatoes into 1-inch cubes.
  4. Grease a 13x9 baking dish and add half of the potatoes.
  5. Sprinkle with half the salt, pepper, and bacon. Spread on half the sour cream. Then top with half of each of the cheeses.
  6. Add rest of potatoes to baking dish, and repeat the layers in step 6 using the rest of the ingredients
  7. Bake uncovered at 400 for 16-22 minutes or until cheeses are melted.
  8. Sprinkle with the sliced green onion.
