Cast Iron Beer Cheese

Ingredients

  • 3 cup fresh shredded cheddar
  • 8oz cream cheese, softened
  • 4 cloves garlic, grated
  • 1 tbsp fresh chopped chives
  • 1 cup lager beer
  • Salt and Cayenne Pepper to taste
  • Toasted baguette slices/pretzels/etc for service

Directions (Campfire)

  1. In a large cast-iron skillet, add cheddar, cream cheese, garlic, chives, and beer and season with salt and cayenne. Cover with foil.
  2. Cook over campfire until melty, about 15 minutes.

Directions (Stovetop)

  1. In a large cast-iron skillet, add cheddar, cream cheese, garlic, chives, and beer and season with salt and cayenne. Cover with lid, bring to a simmer (med/high)
  2. Reduce heat and keep at a simmer until melty, about 15 minutes. Stir occasionally.
