Blackberry Cobbler

ngredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 ¾ cups milk
  • 1 stick butter
  • 4 cups fresh blackberries if using frozen rinse and pat dry
  • 4 tablespoons light brown sugar

Directions

  1. Preheat the oven to 350. On the stovetop, add a stick of butter to a 12in dutch oven, and warm on low to melt butter.
  2. In a large bowl combine the sugar, flour, baking powder, salt and cinnamon.
  3. Whisk in the milk until smooth. Pour the batter over the butter in the dutch oven.
  4. Add 3 cups of blackberries to the batter, and gently pat down into the batter. Then evenly top the batter with the remaining cup of blackberries.
  5. Bake for 50 minutes, then remove from the oven and sprinkle on the brown sugar. Continue to bake for about 10 minutes or until golden brown.
  6. Let cool slightly before serving to allow the cobbler to set up a bit.
